Island Mexican Store keeps on growing

An entrepreneur knows he has done something right with his business plan when after a few short years, he is able to expand his operation and move into larger, more accommodating facilities.

That is what David and Elizabeth Peters are currently experiencing as they move their business, Island Mexican Store, into a building with more space.

The Bow Island business first opened its doors in 2007, starting out with offering fresh, homemade pasta for their customers. Within three years, they added a tortilla machine to expand their product.

“There is a good market for it here,” said proprietor, David, who runs the business with his family and a few staff members.

Approximately 18 months ago, the Peters’ purchased a building for a store and began selling other Mexican items to their clientele in addition to their pasta and tortillas and currently, the store is in one building and their pasta and tortilla making equipment, along with refrigeration, is in another. Moving into a larger facility means they will be able to house their entire operation under one roof.

Island Mexican Store will not be moving very far. Located at the west end of the 100 block on Fifth Avenue, the new store, which has been remodeled to accommodate the business, will include a spacious food preparation room where Elizabeth will be able to make her pasta and tortillas. There will also be a retail area with ample floor space, a staff room, office, and storage areas.

“We will be able to offer more Mexican product, but we offer a little bit of everything and we are able to have it all in one building,” said David.

Besides food products, Island Mexican Store, also offers sewing items, fabric, clothing such as sweaters, hand-crafted items, cutlery, Watkins products, and gift items.

While some items have already been moved to their new home, official moving day will be Oct. 31 and the new Island Mexican Store is slated to open on Nov. 1.

“Everybody is welcome to come check out our new location,” he said.

Once they are all moved in and settled, David said they may be further expanding their product.
